Coated with crispy parmesan, these Air Fryer Zucchini Fries are insanely delicious and healthy too!
Like my Air Fryer Kale Chips, these Air Fryer Zucchini Fries are a healthy snack and great way to eat more vegetables! They are naturally gluten-free (no flour, no breadcrumbs) and contain only 129 calories and 4 grams of carbohydrates per serving. This recipe is a good source of protein, vitamins A & C, potassium, and calcium!
Zucchini really is an underrated vegetable in my opinion! They are inexpensive to purchase and are so versatile. Two of my other favorite zucchini recipes include my Blueberry Zucchini Bread and Mediterranean Vegetables - check them out!
Ingredients you will need
This recipe requires only 3 ingredients, plus a few spices you probably already have on hand.
Zucchini - Two zucchini are used for this recipe. I prefer the smaller ones because they have less moisture and fewer seeds.
Egg - One beaten egg is used to help the parmesan stick to the zucchini.
Parmesan Cheese - Freshly grated parmesan provides a crispy coating.
Spices - For this recipe I used Italian seasoning, onion powder and black pepper.
Flavor Variations

How to make zucchini fries in the air fryer
Set your air fryer to cook for 8 minutes at 375 degrees.
While the air fryer is preheating, cut the zucchini into sticks of about 3 inches long and ½ inch wide. Pat the zucchini sticks with a towel to remove any moisture. Place a beaten egg in a shallow dish, and the parmesan cheese and spices in a second dish.
Coat the zucchini sticks in the egg, and then gently toss and/or sprinkle on the cheese mixture.
Arrange zucchini sticks into a single layer in the air fryer. You will need to cook them in 2 separate batches. Cook for 8 minutes or until crispy and golden brown!
Helpful Hints
When coating the fries, be sure to use separate hands for the egg and cheese mixture. Use your left hand to coat in the egg and your right hand to gently toss and/or sprinkle with the cheese mixture (otherwise the cheese will clump).
Be sure to cook the fries in 2 separate batches so that they are spread apart from each other which allows them to become crispy.
What to serve with zucchini fries
I personally like to eat them on their own as a snack, but they would also be great with the following:
Dip - Ketchup, marinara or pizza sauce, garlic aioli, or even my Avocado Sauce would be fantastic for dipping!
Other Appetizers such as my Fiesta Corn and Avocado Salad!
A Burger - These zucchini fries would pair perfectly with my Chickpea Patties!
Storage Instructions
These Air Fryer Zucchini Fries are best when eaten right away however can be stored in an airtight container in the refrigerator for up to 3 days. Be sure to heat them up for a couple of minutes in the air fryer and not in the microwave as they may become mushy.
Don't have an air fryer?
No problem! These zucchini fries can be made in the oven too. Arrange them on a baking sheet and cook at 425 degrees for 20 minutes or until crispy and golden brown.
