These Pistachio Energy Balls are made with wholesome ingredients, are quick and easy to make, and are packed full of nutrients!

These no-bake energy balls are the perfect snack! I like to bring them to work with me to have on hand for when I fall into that afternoon slump and need a pick-me-up. They also great for traveling and breakfast on the go!
How to Make Pistachio Energy Bites
These little energy balls are so simple to assemble; you are going to want to make them all the time! Before you get started, remove any loose skins from the pistachios by rubbing them between your fingers. Place ¼ cup of the pistachios into a food processor and pulse until finely chopped. Set them aside on a plate.

Add the remaining pistachios and all of the other ingredients into the food processor and pulse until well combined. Don't have a food processor? No problem! You can chop the pistachios by hand and mix all of the ingredients together in a bowl. It will just take you a little longer.


Add 2 tablespoon warm water and pulse again. Place the mixture onto a plate. Form the mixture into 1 inch balls. I found that using damp hands helps the balls to form more easily. Roll the balls in the chopped pistachios to coat.

Place the balls on the a baking sheet lined with parchment paper. Chill for 2 hours before serving, and store up to 7 days in your refrigerator. I can guarantee you though, they are not going to last that long!

Equipment
- Food Processor
Ingredients
- 1 cup Oats
- 1 cup Dates pitted
- ¾ cup Pistachios
- ½ cup Peanut Butter
- ¼ cup Dark Chocolate Chips
- ¼ cup Coconut shredded
- 2 tablespoon Flaxseed ground
Instructions

Notes

What kind of peanut butter do you use?
I prefer to use a natural peanut butter, but any smooth peanut butter could be used!
I just tried your recipe , it is really good. It was very easy to put together and looks fantastic. My 3 years old helped me to make it I hope she will like it too.
