
This Chickpea Salad is healthy, colorful, full of flavor, and so easy to make! Serve it along side a burger or grilled chicken at your next barbecue, and you’ll have your guests oohing and ahhing.
Not only is it the perfect side dish, Chickpea Salad makes for a great meal all by itself! Sometimes I will make a batch and portion it out into lunches for the week.
Chickpea Salad Ingredients
Chickpeas, which are also known as garbanzo beans, are super healthy and packed full of protein.
Edamame, which is pronounced eh·duh·maa·mei, are immature soybeans that can be found with the frozen vegetables at your supermarket.
Fresh Vegetables: Scallions, carrots and bell peppers give this salad some added crunch and a whole lot of vitamins.
Dried Cranberries provide some sweetness to this salad, and are an excellent source of fiber.
EVOO: Extra virgin olive oil is rich in monounsaturated fat, which may help to lower your LDL “bad” cholesterol levels. Feel free to substitute your favorite vegetable oil.
Balsamic Vinegar adds some lovely flavor and tang to this salad.
Seasonings: Cumin, Italian seasoning, garlic powder, and a little bit of salt & pepper add some bold flavor.

How do you make Chickpea Salad?
Aside from dicing the peppers and grating the carrot, this salad requires very little effort. Simply mix together all of the ingredients!
For best results, refrigerate your salad overnight to help all of the flavors infuse.

Chickpea Salad
Ingredients
- 2 15.5 ounce cans Chickpeas drained
- 1 cup Edamame
- 1 cup Carrot grated
- 1 Red Bell Pepper diced
- 1 Yellow Bell Pepper diced
- 1/4 cup Scallions thinly sliced
- 1/2 cup Dried Cranberries
- 1/3 cup Olive Oil extra virgin
- 2 Tbsp Balsamic Vinegar
- 1 tsp Cumin
- 1/2 tsp Italian Seasoning
- 1/2 tsp Garlic Powder
- 1/4 tsp Kosher Salt
- 1/4 tsp Black Pepper
Instructions
- Add all ingredients into a bowl and mix.
- That's it!
Notes
- Chickpeas are also known as garbanzo beans.
