Ingredients
  

  • 2 cans Chickpeas drained and rinsed
  • 1 cup Edamame thawed
  • 1 Carrot grated
  • 1 Red Bell Pepper chopped
  • 1 Yellow Bell Pepper chopped
  • ¼ cup Scallions thinly sliced
  • ½ cup Dried Cranberries
  • cup Olive Oil extra virgin
  • 2 Tablespoons Balsamic Vinegar
  • 1 teaspoon Cumin
  • ¾ teaspoon Italian Seasoning
  • ½ teaspoon Garlic Powder
  • ¼ teaspoon Kosher Salt
  • ¼ teaspoon Black Pepper

Instructions
 

  • Combine all ingredients in a bowl.
  • Refrigerator overnight for best flavor.

Notes

  • Chickpeas are also known as garbanzo beans.
  • Edamame can be found alongside the frozen vegetables at your supermarket.
  • Store in an airtight container in the refrigerator for up to 5 days.
