This scrumptious salad is full of Mediterranean flavor and is super simple to make. Just divvy up the ingredients into bowls and top with my Mediterranean Salad Dressing. There is no cooking involved, as I used a store-bought rotisserie chicken! Okay, well I did toast the pine nuts, but that is completely optional. 🙂
How to Customize this Recipe
There are so many ways in which you can customize this salad recipe with ingredients that you prefer or happen to have on hand. It can also be made vegetarian by swapping out the chicken. Here are a few ideas:

This Mediterranean Chicken Salad recipe can be made ahead of time and stored in the refrigerator for up to 3 days. Be sure to add the dressing and pine nuts just prior to serving.

Mediterranean Chicken Salad
Ingredients
Mediterranean Chicken Salad
- Store-bought Rotisserie Chicken skin removed and cut into bite-sized pieces
- 4 cups Salad Greens (I use a spring mix)
- 1 large Cucumber halved lengthwise and sliced
- 16 ounce jar Roasted Red Bell Pepper Strips drained
- 14 ounce can Artichoke Hearts drained and chopped
- ¼ cup Pine Nuts
Mediterranean Salad Dressing
- ½ cup Olive Oil extra virgin
- 3 Tablespoons Red Wine Vinegar
- 1 Lemon juiced (about 3 Tablespoons)
- 1 Tablespoon Dijon Mustard
- 1 teaspoon Basil dried
- 1 teaspoon Oregano dried
- 1 teaspoon Thyme Leaves dried
- ¾ teaspoon Garlic Powder
- ½ teaspoon Salt
- Black Pepper to taste
Instructions
- Divide the salad ingredients into 4 serving bowls.
- Mix the dressing ingredients together then drizzle 2 Tablespoons on each salad.
Notes
- The dressing ingredients can be mixed together in a bowl with a whisk, however I like to add them to a small glass jar with a lid (a mason jar works) and give it a good shake.
- Pine Nuts may be toasted, if desired.

Loved this salad and the dressing is so delicious! I added fresh red pepper strips instead of roasted peppers to the salad. Also, I toasted slivered almonds instead of pine nuts. I will definitely make this salad and dressing again!
