Looking for an easy cookie recipe that is good for you too? These Healthy Pumpkin Spice Cookies are soft and chewy, require only 4 ingredients, and are ready in just 15 minutes!

It's that time of year when I am craving all things pumpkin! I usually go for more savory recipes like my Pumpkin Risotto, Pumpkin Sage Hummus, or Gnocchi with Pumpkin Thyme Sauce but today decided to try something sweet.
These healthy pumpkin spice cookies are packed full of wholesome ingredients, and just one cookie provides 80% of your recommended daily intake of vitamin A!
I'd say they are similar in texture to my Banana Oatmeal Breakfast Bites and not only are they good for snacking but also make an easy grab-and-go breakfast!

🧾 Ingredients
This recipe requires only 4 ingredients that you may already have in your pantry.

Pumpkin - Be sure to use 100% pure canned pumpkin and not a pumpkin pie filling which contains additional sugar and spices.
Oats - Old fashioned rolled oats or quick oats are used for this recipe.
Maple Syrup - Pure maple syrup adds some natural sweetness.
Pumpkin Pie Spice - An aromatic blend of cinnamon, nutmeg, and ginger make these cookies irresistible.

What a fun cooking project this would be for kids! They couldn't be any easier to make!

Step 1: Preheat oven to 350 degrees, and line cookie sheet with parchment paper.

Step 2: Combine all ingredients in a mixing bowl.

Step 3: Scoop batter into eight dollops on cookie sheet (about 2 tablespoons each).

Step 4: Bake for 10 minutes and then allow to cool.
🍄 Substitutions
Pumpkin - Pumpkin puree can be substituted for canned pumpkin. Just be sure to drain it well.
Maple syrup - Honey may be substituted.
Pumpkin pie spice - Don't have any on hand? No problem! You can substitute cinnamon with a pinch of nutmeg and ginger.

Want to make these even healthier? Add a tablespoon of flax, hemp, or chia seeds. You could even add a ¼ cup of chocolate chips, walnuts, raisins, or nut butter!
