Ingredients
  

  • ½ cup Pumpkin canned
  • 1 cup Old Fashioned Rolled Oats
  • ¼ cup Maple Syrup
  • ½ teaspoon Pumpkin Pie Spice

Instructions
 

  • Preheat oven to 350 degrees, and line cookie sheet with parchment paper.
  • Combine all ingredients in a mixing bowl.
  • Scoop batter into eight dollops on cookie sheet (about 2 tablespoons each).
  • Bake for 10 minutes and then allow to cool.

Notes

  • Be sure to use 100% pure canned pumpkin and not a pumpkin pie filling which contains additional sugar and spices.
  • Want to mix things up a bit? Add a tablespoon of flax, hemp, or chia seeds. You could also add a ¼ cup of chocolate chips, walnuts, raisins, or nut butter!
