These delicious, homemade Coconut Lime Scones are soft, flaky, and oh so good! Serve them for breakfast, or as an afternoon snack with your favorite cup of coffee or tea.
I've been dreaming of warmer weather and thought what better way to escape to the tropics than to whip up a batch of my Coconut Lime Scones. These tropical tasting treats are so moist and are drizzled with a decadent lime glaze.
How to make Coconut Lime Scones
These scones come together quite easily, but there are a few things you need to do before we get started.
- Zest and juice the lime
- Prepare a clean, floured surface
- Grate the butter with a cheese grater (I place my butter in the freezer for 10-15 minutes prior to grating, so that it is very cold)
Okay, let's get started! First, combine the flour, granulated sugar, baking powder, lime zest, and salt in a large mixing bowl.
Stir in the butter.
Next, whisk together the milk, egg, and coconut extract in a small bowl. Add this mixture to the dry ingredients and stir until just combined.
Place the dough onto the clean, floured surface and flatten it into a 7 inch circle.
Cut the dough into 8 wedges with a butter knife. Place the wedges onto an ungreased baking sheet and bake at 400 degrees for 13-15 minutes, or until they start to brown.
For the lime glaze, simply mix together the powdered sugar and 1 tablespoon lime juice. Drizzle over the scones, and serve.

- 2 cups All Purpose Flour
- ¼ cup Sugar granulated
- 1 tablespoon Baking Powder
- 1 tablespoon Lime Zest
- ¼ teaspoon Salt
- ½ cup Butter
- ⅔ cup Milk any type
- 1 Egg
- 2 teaspoon Coconut Extract
Lime Glaze
- ½ cup Powdered Sugar
- 1 tablespoon Lime Juice

- Using a butter knife, cut the circle into 8 wedges.
- Place scones onto an ungreased baking sheet and bake for 13-15 minutes, or until they start to brown.
Lime Glaze
- Whisk together the powdered sugar and 1 tablespoon lime juice.
- Drizzle the glaze over the scones, and serve.
Notes
- A ½ cup butter equals 8 Tablespoons or 1 stick.
- Place the butter in the freezer for 10-15 minutes prior to use, so that it is very cold.
- If you don't have a cheese grater, you can cut the butter into small pieces and cut it into the flour mixture with a pastry blender.
