Banana Oatmeal Breakfast Bites

Ingredients
  

  • 2 medium Bananas ripe
  • 1 cup Oats quick
  • ¼ cup Chocolate Chips mini
  • 2 Tablespoons Oat Milk
  • 2 Tablespoons Walnuts chopped
  • 2 Tablespoons Flaxseed, Hemp Hearts, and/or Chia Seeds
  • 1 Tablespoon Maple Syrup
  • ¼ teaspoon Cinnamon

Instructions
 

  • In a large mixing bowl, mash the bananas.
  • Add the oats, chocolate chips, oat milk, walnuts, flaxseed, hemp hearts and/or chia seeds, maple syrup, and cinnamon to form a moist mixture.
  • Drop heaping tablespoons of the mixture onto a baking sheet lined with parchment paper. Pat them down by hand and form into circular cookie shapes.
  • Bake at 350 degrees for 10 minutes. Let them cool slightly before eating.

Notes

  • For gluten-free breakfast bites, be sure to use certified gluten-free oats. 
  • This recipe is versatile and the ingredients can be adjusted to your liking. Here are some of my other favorite substitutions:
    • dates
    • raisins
    • dried cranberries
    • chopped pecans
    • shredded coconut
    • pumpkin pie spice
  • These breakfast bites can be stored in an airtight container at room temperature or in the refrigerator  for 2-3 days.
