Ingredients
  

Mediterranean Chicken Salad

  • Store-bought Rotisserie Chicken skin removed and cut into bite-sized pieces
  • 4 cups Salad Greens (I use a spring mix)
  • 1 large Cucumber halved lengthwise and sliced
  • 16 ounce jar Roasted Red Bell Pepper Strips drained
  • 14 ounce can Artichoke Hearts drained and chopped
  • ¼ cup Pine Nuts

Mediterranean Salad Dressing

  • ½ cup Olive Oil extra virgin
  • 3 Tablespoons Red Wine Vinegar
  • 1 Lemon juiced (about 3 Tablespoons)
  • 1 Tablespoon Dijon Mustard
  • 1 teaspoon Basil dried
  • 1 teaspoon Oregano dried
  • 1 teaspoon Thyme Leaves dried
  • ¾ teaspoon Garlic Powder
  • ½ teaspoon Salt
  • Black Pepper to taste

Instructions
 

  • Divide the salad ingredients into 4 serving bowls.
  • Mix the dressing ingredients together then drizzle 2 Tablespoons on each salad.

Notes

  • The dressing ingredients can be mixed together in a bowl with a whisk, however I like to add them to a small glass jar with a lid (a mason jar works) and give it a good shake.
  • Pine Nuts may be toasted, if desired.
