Healthy & delicious, this Mediterranean Chicken Salad is easy to make and is ready in just 15 minutes - no cooking required! Perfect for lunch or busy weeknights!
Store-bought Rotisserie Chickenskin removed and cut into bite-sized pieces
4cupsSalad Greens(I use a spring mix)
1large Cucumberhalved lengthwise and sliced
16ounce jarRoasted Red Bell Pepper Stripsdrained
14ounce canArtichoke Heartsdrained and chopped
¼cupPine Nuts
Mediterranean Salad Dressing
½cupOlive Oilextra virgin
3Tablespoons Red Wine Vinegar
1Lemonjuiced (about 3 Tablespoons)
1TablespoonDijon Mustard
1teaspoonBasildried
1teaspoonOreganodried
1 teaspoonThyme Leavesdried
¾teaspoonGarlic Powder
½teaspoonSalt
Black Pepperto taste
Instructions
Divide the salad ingredients into 4 serving bowls.
Mix the dressing ingredients together then drizzle 2 Tablespoons on each salad.
Notes
The dressing ingredients can be mixed together in a bowl with a whisk, however I like to add them to a small glass jar with a lid (a mason jar works) and give it a good shake.
Pine Nuts may be toasted, if desired.
