Coconut Lime Scones

These delicious, homemade Coconut Lime Scones are soft, flaky, and oh so good! Serve them for breakfast, or as an afternoon snack with your favorite cup of coffee or tea.

  • 2 cups All Purpose Flour
  • 1/4 cup Sugar granulated
  • 1 Tbsp Baking Powder
  • 1 Tbsp Lime Zest
  • 1/4 tsp Salt
  • 1/2 cup Butter
  • 2/3 cup Milk any type
  • 1 Egg
  • 2 tsp Coconut Extract

Lime Glaze

  • 1/2 cup Powdered Sugar
  • 1 Tbsp Lime Juice


Before you get started

  • Preheat oven to 400 degrees.
  • Zest and juice the lime.
  • Prepare a clean, floured surface.
  • Grate the butter with a cheese grater.


  • In a large mixing bowl, combine the flour, granulated sugar, baking powder, lime zest, and salt.
  • Stir in the butter.
  • In a small mixing bowl, whisk together the milk, egg, and coconut extract.
  • Add the milk mixture to the dry ingredients and stir until just combined.
  • Place the dough onto the floured surface and flatten it into a 7 inch circle.
  • Using a butter knife, cut the circle into 8 wedges.
  • Place scones onto an ungreased baking sheet and bake for 13-15 minutes, or until they start to brown.

Lime Glaze

  • Whisk together the powdered sugar and 1 Tbsp lime juice.
  • Drizzle the glaze over the scones, and serve.


  • A 1/2 cup butter equals 8 Tablespoons or 1 stick.
  • Place the butter in the freezer for 10-15 minutes prior to use, so that it is very cold.
  • If you don't have a cheese grater, you can cut the butter into small pieces and cut it into the flour mixture with a pastry blender.
