Air Fryer Zucchini Fries

Ingredients
  

  • 2 small Zucchini cut into ½" fries
  • 1 cup Parmesan Cheese freshly grated
  • 1 large Egg
  • 1 teaspoon Onion Powder
  • 1 teaspoon Italian Seasoning
  • ¼ teaspoon Black Pepper

Instructions
 

  • Set your air fryer to cook for 8 minutes at 375 degrees.
  • While the air fryer is preheating, cut the zucchini into sticks of about 3 inches long and ½ inch wide. Pat the zucchini sticks with a towel to remove any moisture.
  • Place a beaten egg in a shallow dish, and the parmesan cheese and spices in a second dish.
  • Coat the zucchini sticks in the egg, and then gently toss and/or sprinkle on the cheese mixture.
  • Arrange zucchini sticks into a single layer in the air fryer. You will need to cook them in 2 separate batches. Cook for 8 minutes or until crispy and golden brown!

Notes

  • Feel free to mix up the spices to your liking. Cajun, taco, ranch, garlic - the flavor possibilities are endless!
  • When coating the fries, be sure to use separate hands for the egg and cheese mixture. Use your left hand to coat in the egg and your right hand to gently toss and/or sprinkle with the cheese mixture (otherwise the cheese will clump).
  • Be sure to cook the fries in 2 separate batches so that they are spread apart from each other which allows them to become crispy.
  • These Air Fryer Zucchini Fries are best when eaten fresh however can be stored in an airtight container in the refrigerator for up to 3 days. Be sure to heat them up for a couple of minutes in the air fryer and not in the microwave as they may become mushy.
  • Don't have an air fryer? No problem! These zucchini fries can be made in the oven too. Arrange them on a baking sheet and cook at 425 degrees for 20 minutes or until crispy and golden brown.
