Celebrate the red, white, and blue with this 4th of July French Toast Casserole! This crowd-pleasing breakfast is baked until golden brown, dusted with powdered sugar, and then decorated with fresh berries.

Ingredients
  

  • 15 ounce loaf Crusty Bread French or Italian
  • 8 large Eggs beaten
  • 3 cups Oat Milk
  • 1 Tablespoon Vanilla Extract
  • 2 teaspoons Cinnamon
  • 1 Tablespoon Powdered Sugar
  • 1 cup Blueberries fresh
  • 3 cups Strawberries fresh, sliced

Instructions
 

  • Preheat oven to 400 degrees.
  • Cut the loaf of bread into 1-inch pieces and place into a greased 9x13 baking pan.
  • In a large mixing bowl, whisk together the eggs, milk, cinnamon, and vanilla until combined.
  • Pour the egg mixture over the bread. With the back of a spatula, press the bread pieces into the egg mixture until all of the bread is saturated.
  • Bake for 35-40 minutes or until golden brown.
  • Let the casserole sit for 15 minutes, then dust with powdered sugar and decorate with fresh blueberries and strawberries.
  • Serve with a drizzle of maple syrup or a dollop of whipped cream. Enjoy!

Notes

  • Any type of crusty bread can be used for this recipe. Look for a 15 ounce loaf of Italian or French bread in the bakery section of your supermarket. If you'd rather use a loaf of sandwich bread, be sure to let it sit overnight uncovered so it becomes stale. If the bread is too soft, your casserole will become soggy.
  • This French Toast Casserole can be prepared, covered, and stored in the refrigerator overnight, and then baked the next morning if you choose.
  • Make this casserole all year long and mix it up with your favorite fruits. Blackberries, raspberries, peaches, and nectarines are also great!
