Place ¼ cup of the pistachios into the food processor. Pulse until finely chopped and set them aside on a plate.
Add the remaining ½ cup of pistachios and all of the other ingredients to the food processor and pulse until well combined.
Add 2 tablespoon warm water and pulse again. Place mixture onto a plate.
Form the mixture into 1 inch balls and roll them in the chopped pistachios to coat.
Place the balls onto a baking sheet lined with parchment paper. Chill for 2 hours before serving and store up to 7 days in the refrigerator.
Notes
Rub the pistachios between your fingers to remove any loose skins prior to processing.
Using damp hands will help you to form the balls more easily.
Don't have a food processor? No problem! You can chop the pistachios by hand and mix all of the ingredients together in a bowl. It will just take a little longer.
